An inherited cuisine
It comes as a surprise to most people that seafood and fish are not among the most traditional of Sardinian ingredients and that the majority of fish related recipes in Sardinia are fairly new. The main reason for this is due to the continual invasion of the island by outside forces. The people of Sardinia fled inland and settled in the mountainous regions leaving the coastal regions to marauding invaders. These invaders from Spain and North Africa amongst others did of course leave their mark on the cuisine and left behind what can now be considered the inherited coastal recipes of Sardinia. The Mediterranean waters surrounding Sardinia are home to some of the finest fish in Europe and the fish market of Cagliari is the largest in all of Italy.
